Each October the anticipation in the mill is palpable as we wait for the first spoonful of the harvest’s initial pressing. Every year, we are astounded by the delicate burst of flavor that this velvety oil delivers. Poggio di Fiesole’s Evo allows you to enjoy your own explosion of flavors every time you open a new bottle, as if you were standing side by side with us at the mill.

Varietals: Frantoio, Moraiolo, Leccino, Pendolino

 

FLAVOR PROFILE:

Our freshly pressed oil is velvety, vibrant green, and packed full of that Tuscan spice that people love.

 

Flavor notes: a clean and persistent fruitiness of green olive, with hints of red fruit, olive leaf, and chamomile

Color: vibrant green immediately after pressing, transitioning to a beautiful, rich golden hue

Aftertaste: bitter almonds and artichokes

Bitterness level: medium

Spice level: medium and persistent spiciness

As fourth generation farmers, we know what it takes to make an unforgettable organic extra virgin olive oil. Our olive trees are rooted in fertile and rich soil that has never been treated with synthetic products. We still personally care for and harvest the trees by hand in a continual effort to minimize our impact on our ancestral land. 

SUSTAINALBE FARMING

As fourth generation farmers, we know what it takes to make an unforgettable organic extra virgin olive oil. Our olive trees are rooted in fertile and rich soil that has never been treated with synthetic products. We still personally care for and harvest the trees by hand in a continual effort to minimize our impact on our ancestral land. 

PRODUCTION TECHNIQUES

Sustainable: Organic forever, our oil has been certified organic since the label was established in Italy in the early ’90s.

Cultivation: All of our trees are still cared for by hand. Trees are trimmed, fertilized (with organic matter), cleaned, and nurtured manually.

Harvesting: Our olives are harvested by hand starting in early October.

Pressing: Olives are pressed only once and within eight hours of harvesting at state-of-the-art facilities. The entire pressing process is performed at cold temperatures by only mechanical means. No chemicals are used in our oil extraction process.

Filtration: Our oil is filtered immediately upon arrival to our olive oil cellar after being pressed at the mill. This avoids fermentation that can occur if sediments remain in the oil.

Storage: All of our oil is stored in our on-site olive oil cellar in 500L – 1000L tanks until an order is placed. The tanks are stored away from sunlight exposure and are at a constant temperature of 18°C ​​​​​​​​​​​year long. In the tanks, the oil is always kept under a layer of argon gas (a food safe and odorless gas) to prevent oxidation.

 

BOTTLING & SHIPPING

Storage: All of our oil is stored in our on-site olive oil cellar in 500L – 1000L tanks until an order is placed. The tanks are stored away from sunlight exposure and are at a constant temperature of 18°C ​​​​​​​​​​​year long. In the tanks, the oil is always kept under a layer of argon gas (a food safe and odorless gas) to prevent oxidation.

Bottling: We bottle on demand to keep oil at its peak condition. All bottles are topped with argon gas to preserve freshness.

Packaging: The container is a dark green glass bottle.

Shipping Materials: The shipping materials are of sustainable origin and are easily recyclable (cardboard, paper adhesive tape, compostable corn starch chips).
