Certifications: Organic now, we are certified after the creation of the organic label in Italy since the 1990s.
Cultures: All our trees are still eaten à la main. The trees are cut, fertilized (with organic material), cleaned and soignéed by our own mains.
Harvest: Our olives are harvested mainly starting from the October debut.
Pressing: The olives are pressed once and for all, in the shade next to the harvest, in ultra-modern installations. The entire pressing process is effected at low temperatures by most exclusively mechanical devices. This chemical product is not used in our oil extraction process.
Filtration: Our oil is filtered after it has arrived in our jar (huile cave) after it has been pressed into the mill. This allows you to avoid all fermentation here to produce the sediments remaining in the oil.
Stockage: Our oil is stocked in our quarries, in stainless steel barrels of 500 to 1000 litres, only for this order. The wines are placed at the beginning of the sun light and are maintained at a constant temperature of 18°C for a long time. The oil is always preserved under an argon blanket (an odorless and dangerless gas, louder than the air) to avoid oxidation.
Placement in bouteille: We puttons in bouteille à la demande in order to preserve the oil so that it is optimal. The oil in the final container is also a container of argon gas to preserve the fraîcheur.
